Proofreading or Editing?

What is the difference between the different levels of proofreading and editing?

Here are some examples:

Original Text:
What makes a good scholars into a grate scholar, is having both good knowledge in his field and respect for the other scholars.

Standard Proofreading:
What makes a good scholar into a great scholar is having both good knowledge in his field and respect for the other scholars.

Editorial Proofreading:
What turns a good scholar into a great scholar is having both good knowledge in his field and respect for the other scholars.

Copyediting:
Having good knowledge in one’s field as well as respect for the other scholars is what turns a good scholar into a great one. (sentence restructuring)

Substantive editing:
Good scholars have good knowledge in their field; great ones have respect for the other scholars too. (rewriting)
